1 tablespoon olive oil 1 onion, diced 3 cloves garlic, minced 4 cups chicken broth 2 cups water 1 cup red lentils 1 large carrot, diced 1 large parsnip, diced 2 cups cooked shredded chicken 4 tablespoons butter 1/2 cup all-purpose flour 1 1/2 cups milk salt and pepper, to taste chopped fresh parsley, for garnish (optional) Instructions:

Heat the oil in a large pot over medium heat. Add the onion and garlic and cook until softened, stirring occasionally, about 5 minutes. # Add the chicken broth and water and bring to a boil. Stir in the lentils and carrot and parsnip. 1 lb. boneless, skinless chicken breasts 1 large onion, chopped 3 carrots, peeled and chopped 3 stalks celery, chopped 2 cloves garlic, minced 4 cups chicken broth 1 cup milk 2-3 potatoes, peeled and diced salt and pepper to taste garnish with fresh parsley if desired

Instructions:

  1. In a large stockpot or Dutch oven over medium heat, sauté onions, carrots and celery in olive oil until softened. Add garlic and chicken broth and bring to a boil.

  2. Add chicken breasts and simmer until cooked through. Remove chicken from pot and shred with two forks.

  3. Add potatoes to soup and simmer until soft. Mash some of the potatoes for added creaminess. Stir in shredded chicken and milk. Season with salt and pepper to taste. Serve hot with fresh parsley garnish if desired. Enjoy!
