Creamed Mashed Chicken Soup Is the Perfect Comfort Food

There's nothing like a big bowl of creamy mashed chicken soup to warm you up on a cold winter day. This recipe is hearty, comforting, and sure to please even the pickiest of eaters.

Ingredients:

1 lb. boneless, skinless chicken breasts

3 cups chicken broth

1 onion, chopped

3 carrots, peeled and sliced

3 celery stalks, sliced

1 garlic clove, minced

1/2 cup heavy cream

1/4 cup all-purpose flour

Salt and pepper, to taste

Instructions:

In a large pot or Dutch oven over medium heat, add the chicken breasts and chicken broth.   Bring to a simmer and cook until the chicken is cooked through, about 10 minutes.   Remove the chicken from the pot and set aside to cool slightly.     In the same pot, add the onion, carrots, celery, garlic, and salt and pepper to taste.  Cook until the vegetables are tender, about 10 minutes.     Meanwhile, shred the cooked chicken breast with two forks.  Add the shredded chicken back into the pot along with the heavy cream and all-purpose flour.    Stir until well combined and heated through.    Serve immediately with some fresh bread for dipping. Reduce the heat to low and simmer for 10 minutes.    In a small bowl, whisk together the cornstarch, salt, and black pepper until combined. Add this mixture to the soup and stir well. Simmer for 5 more minutes until thickened.    Add the milk and mashed potatoes and stir well to combine. Cook for another 5 minutes until heated through. Serve hot with crackers or bread for dipping.

First, cook some shredded chicken in a large pot until it is cooked through. Then add some chopped onion, garlic, and celery to the pot and cook until softened. Next, add in the potatoes, chicken broth, milk, salt and pepper to the pot and bring to a boil. Reduce the heat to low and simmer for about 15 minutes or until the potatoes are soft.

Finally, use an immersion blender or regular blender to blend the soup until it is smooth. Serve hot with some shredded cheese and chives on top. Enjoy!

Add the onion, celery, carrot, garlic, thyme leaves, and black pepper.  Simmer for 10 minutes until vegetables are tender.  Add the mashed chicken and stir well to combine.    Simmer for 5 more minutes until heated through.     Serve hot with some crusty bread on the side for dipping. Enjoy!
